Sticky Toffee and Banana Pudding

An old-fashioned favorite, I just had to include a sticky toffee pudding in the book, and my family love this banana version. The portions are deliberately generous to make sure there’s plenty left over to enjoy the rest of the week.

MAKES 2 adult and 2 child portions

PREPARATION TIME 15 minutes

COOKING TIME 30 minutes

FOR THE BANANA PUDDING

6 tablespoons butter, soft, plus extra for greasing

2 cups pitted and chopped dates

1 cup plus 2 tablespoons brewed tea

1 teaspoon baking soda

1 cup sugar

2 eggs, beaten

1½ cups less 2 tablespoons self-rising flour

2 ripe bananas, peeled and mashed

1 teaspoon apple pie spice

ice cream, to serve

FOR THE STICKY TOFFEE SAUCE

½ cup soft light or dark brown sugar

5 tablespoons unsalted butter

½ cup heavy cream
